Food Chemicals Codex (5th Edition) (c) 2003, National Academies Press. Knovel's position as the pre-eminent provider of technical information to the food industry was enhanced significantly last year by the addition of Food Chemicals Codex (FCC). Knovel has just launched the 5th Edition of FCC, including the First Supplement, which contains 9 new monographs, 12 revised monographs, 1 new IR Spectra, 1 new solutions and indicators, and a revised appendix. Each monograph is presented in its entirety with a boxed explanatory section preceding it. The new sections of general analytical tests are also presented in their entirety. An erratum has also been added which contains more than 150 revisions of existing specifications and general test methods. The FCC project, currently under the Food and Nutrition Board of the Institute of Medicine of the National Academies, began in 1961. Food Chemicals Codex defines the quality of food-grade chemicals in terms of identity, strength, and purity based on the elements of safety and good manufacturing practice. It is primarily of interest to food chemists, product development staff and scientists in the food industry, and safety and nutrition specialists. The specifications in FCC are the basis for many contractual arrangements between buyers and sellers, and are the basis for regulatory standards for foodstuffs.
